How to Make Okro Soup

Step 1

Slice the okra and set it aside in a bowl. If you’re buying from a Nigerian market, most traders can help slice it for you, but you can also do it yourself using a kitchen knife.

Step 2

Wash the fish or chicken thoroughly, then season with half a teaspoon of salt, two seasoning cubes, one cup of water, and half a cup of sliced onions.

Step 3

Allow it to cook together for 10–15 minutes until the flavours are well absorbed. Remove the fish or chicken and set aside, keeping the stock in the pot for the next step.

Step 4

Pour in 200ml of palm oil, then add the ground crayfish, pepper or shombo, and salt to taste. Allow the mixture to boil for about 8 minutes, then return the cooked chicken or fish and let it simmer for another 3 minutes.

Step 5

Add the sliced okra and stir gently to combine. Place the cooked fish on top and let it cook together for 3–4 minutes. Serve your delicious soup with eba, fufu, or pounded yam.
